How do I stop Outlook automatically saving all my sent messages?

When I send messages, I don't always want them saved in my sent items. How
do I stop Outlook from automatically saving them?

Can I set it up so it prompts me "Save message?" every time I click send.

You can change the default in Tools-> Options-> E-mail Options...
You can set it per message by pressing the Options... button while
composing.
You can also set conditions whether to save it or not by using rules.
