How do I specify a different sent mail folder (on IMAP account)?

You shouldn't need to set up a rule to move sent items into the IMAP sent
folder - there's an option to do that automatically in the IMAP account
properties...

You're correct. It would appear that it's Outlook 2007 only that has this
option...
