How do I show up attachments that have been removed in Outlook?

In an endeavour to reduce my mailbox size, I have been deleting attachments
from messages, and copying them into appropriate directories on the Network.

However, I have noticed that in Outlook 2003 there is then no record of what
the attached file was (or even that there was an attachment), whereas I'm
sure that with a previous version the file name was left in the message with
"removed" appended to it.

Is there a setting somewhere that I've missed to turn this on, or is
removing the facility another one of Microsoft's so-called improvements!

I have never seen the "removed" feature you are talking about. I have written
code in the past that stripped attachments and put the location of the
attachment in the email. There are plenty of add-ins out there that do this.
