How do I set up the default location for my files?

I used to use "preferences" to select the default location for my files when
I open word. I cannot find it in 2007.

You'll find it at Word Options > Advanced > File Locations > Documents

Office Button > Word Options > Advanced tab > General section > File
Locations button
