How do I set up non-newspaper columns?

Is there a work-around to get past the Word default newspaper column set-up?

I'm not sure I understand your question. Have you tried selecting your text
and going to Format | Columns?
 
If you're looking for parallel columns, use a borderless table. If you're
wanting to change the width of your columns, use Format | Columns. See
