How do I change the spacing after using a period to two spaces, and be ready
for the next sentence? Thanks.

Press the space bar twice.

Word's grammar checker can be set to check whether you have two spaces after
full stops.

I would strongly urge you, though, to not use two spaces. Doing so is a
throwback to monospace typing on a typewriter. Appropriate spacing is built
into proportionally spaced fonts.
