How do I get the Word 2003Alt-E menu back when using Word2007?

You don't. Word 2007 has no menus of that kind (other than the former File
menu that's now on the Office button).

All the commands that used to be on the Edit (Alt+E) menu are now buttons on
the ribbon. Look at the 2003-to-2007 command reference at
http://office.microsoft.com/en-us/word/HA100744321033.aspx to see where they
went.

That said, the 2003 keyboard shortcuts should all still work. For example,
Paste Special has the shortcut Alt+E,S and that shortcut still brings up the
Paste Special dialog in 2007.
