How do I get rid of the Favourites" pane in Outlook?

You can't remove or move the Favorite Folders pane heading in the Mail pane.
However, you can minimize the space the Favorite Folders pane takes up by
removing all of the folders in that pane.
Or use the Folder List view instead

Do you mean the Navigation Pane in Outlook 2003?
View | Navigation pane.
 
Sorry, I should have done a bit more research before replying to your post.
The answer would seem to be to use Go | Folder List.
