How do I even use Undo in 2007?

I am using Excel 2007. I have no idea where the undo is. There is a toggle in
the upper left to put it on or off the toolbar but I see no difference when I
flip the toggle. I looked around for the answer and I couldn't find anything.
Although I'll be honest I didn't look very hard because I am tired of these
Microsoft enforced tutorings I have to go through every few years and quite
frankly would rather be using Excel a few versions back laugh.

If you can help me out I'd appreciate it. Otherwise I'll just keep redoing
it the hard way. It takes too long to look over the voluminous material to
find anything here.....

I don't have Excel 2007, but Control-Z is the standard command for Undo in
most Microsoft applications.

The other thing is that many dialogs in Excel 2007 are modeless, meaning
they let you manipulate the Excel window while the dialog is showing. This
means Undo contains a lot of itty bitty changes, not the whole pile of
changes from your visit to the dialog. So you have to hit Ctrl+Z many times
to equal one Excel 2003 Ctrl+Z. You might not notice the minor adjustments
made by the first one or two times you hit Undo.
