how do I erase recent documents?

Do you mean the LIST of recently opened documents in the file menu? I'm sure
there is an elegant version-specific answer for each version, by my KISS /
low tech method is to "open" and then select a block of word documents (more
than are on the list) and open them all at once. Then exit. The list
becomes them instead of the real list.

garfield-n-odie gave you two very good solutions to your question. If you
have'nt found the information as yet try this: Click Office btn.-->Word
options-->Advanced. Scroll down to Display section and change the number in
the show recent documents to zero. Note: You will no longer see any recent
documents displayed with a setting of zero.
