How do i delete files inside an Iso image ?

We Live For The One We Die For The One

I can extract them, but i need to delete some files so i can burn the
image to a disc.

Got any software that allows this ?

An .iso file is a single large CD image file that represents
a whole set of programs and data as they will appear once
extracted and burned onto a CD-ROM disc. The entire CD
image is stored in the ISO 9660 format with a file extension
of ".iso". To be used, the .iso file must be first extracted and
burned onto a CD-ROM disc using the software that came
with your CD-ROM burner.

Well, you in verbatim, gave a basic insight into how ISO images are burned to be used, and didn't answer the question, which was, "I can extract them (files), but i need to delete some files so i can burn the image to a disc.
Got any software that allows this ?"

You didn't answer if (certain) files can be deleted! Not only that, the instructions from the link, from where you copied this little synopsis, is for using "Adaptec Easy CD Creator" software, which you excluded from the paste, and is no longer owned, nor supported by Adaptec.
 
Probably is no practical way, short of cracking into the ISO file, to do
what you want in one step (economically).

1. create the new cd with the iso file.
2. move files to hard disk.
3. destroy the cd just created (since I infer these files ares sensitive)
4. securely delete from hard disk the files you wish to delete
5. create new cd (or iso image if that's what you want) of files now
with out the files that you wished to delete.

You have to re-master the iso. You can use Winimage or create a CD from the
image copy the CD to the hard drive, edit the files and then create a new
iso using third party software.
Do a couple Google searches for procedural details.
