How do I customise the Outlook Email toolbar in Word?

How do I customise the Outlook Email toolbar in Word? This toolbar seems to
disapear when I right click -> customise.

It's not a conventional toolbar and can't be customized. Instead, you can create a new toolbar and put your customizations there.
