How do I change the default so documents don't open side-by-side?

Are you saying that you don't want individual documents to display in the
taskbar? If so, clear the "Show all windows in the Taskbar" option in Word
Options.

No when I open a Word document that is more than 1 page , two pages show
side by side on screen. I just want on epage to show.

Oh, that's not a problem at all. In the View tab of the Ribbon, the
Zoom group (in the middle), choose One Page instead of Two Pages.

In earlier versions there's something similar under the View menu (at
the bottom)
