How do I change the color of the subject line in an email I send?

If you mean how can you make it show up as a different color on the
recipient's end -- you can't. The recipient's e-mail program controls
whether or not subject lines can be changed to different colors depending on
some criteria in the message. To change colors of subject lines in your own
mail folders, you can use Automatic Formatting rules.
