How do I change my stationary?

Using Office 2003 Outlook.
I want to change the stationary image for outgoing mail messages?
Where do I find these settings?
 
These settings are under Tools- Options - Mail Format. FYI - Stationary and
Fonts are not available if you are using Plain Text or Rich Text as your
message format.
