How do I change an automated response in Outlook 2003?

Hello,
I have been asked by my boss to change the text in an automated response
which gets sent out to clients after they email us- (i.e. when clients email
their details we send an automated response saying we will send out a
brochure, etc.)

However I can't find how to change this! Tried going into Tools, but not
listed and no out of office is listed either. Tried ringing Microsoft but
they charge for the advice, so thought I'd try here first. Also tried adding
an 'exchange server', but can't seem to access it from the Control Panel like
Microsoft help suggests.
