How do I add strike-out to deleted items

In some of my folders when I delete an item it is then marked with a
strike-out or stike through line but this does not happen in all of my
folders.

I want to know how I get it to do that in all of my folders, I believe it
has something to do with views but I can't find it.
 
Are the folders that get the strike-through on an IMAP server as opposed to
the ones that don't?

That's how IMAP folders present deletions. Your default folders won't
behave that way.
 
All of my folders are IMAP I guess that is why I don't understand why my
deleted messages don't appear the same in each folder.

You can have IMAP folders (local folders that sync to the same-named
subscribed IMAP folders on the server) and you can have local folders
(that are not sync'ed to the IMAP mailbox folders). Who is the e-mail
provider? What did you specify for the root folder in the IMAP account
you defined in Outlook? Did you subscribe to all the folders in your
IMAP account up on the server? Did you create more folders in Outlook
(i.e., that are local and don't exist on the server)?

That's simply not possible with Outlook. IMAP doesn't even have a Deleted
Items folder. IMAP folders can never be the delivery location folders, so
you will have another set of folders that are not IMAP folders. If you
examine your Folder List view, you will see the two completely distinct sets
of folders. In the IMAP folders, deletion will appear as a strike-through.
In the "Personal Folders", deletion will move an item to the Deleted Items
folder.
I guess that is why I don't understand why my deleted messages don't

Because you don't understand the difference in how Outlook treats IMAP
account folders vs. local folders.
