How do I add or delete an addressee in the "To", "CC" and "BCC" boxes?

How do I add or delete an addressee in the "To", "CC" and "BCC"
boxes?

No need to ask more than once.

You add to that list (the autocompletion cache) by sending mail. You
subtract from that list by using the arrow keys to highlight the address you
don't want and pressing delete. See this:
