How can I send copies of my outgoing mail to different folders?

I would like to keep copies of my outgoing mail in different folders than
'Sent mail'. Can I easily do this on a message-by-message basis? Can I assign
outgoing e-mail messages to categories, for example?

You can do it per message in the Options menu of the message or
automagically by rules;

I'm impressed - at the speed and thoroughness of your reply! I have spent
several hours trying to work this out. I'm a bit disappointed that there is
not an easier system (e.g. a box in which your can write a folder name for
each message) but at least I know that I'm not missing something. Thank you
