How can I modify the text of scanned documents?

We often receive scanned forms via email. Is there a way to modify the text
of these documents? Any ideas would be greatly appreciated.
 
If they are .tif or .mdi documents, open them in Microsoft Document Imaging. Use
the OCR tool, send to Word.
 
You could "print" those scanned documents with the Microsoft Document Image
Writer printer driver. That will prompt you to save the file as a .tif file.
Your computer will probably already know to open that file with the Office
Document Imaging app. Click on the icon with an eye on a piece of paper,
then the paper with a W icon.
 
The process mentioned by Mary and JoAnn is essentially that shown at
http://www.gmayor.com/pdf_to_word.htm, though instead of using Adobe Acrobat
or Reader to print a PDF file, use your current Graphics display application
to print the scanned image file to the MDI driver.
However if you anticipate filling these forms later, you should use a more
sophisticated OCR solution.
The altenative is to insert the form as a background image in Word and write
over it. Frankly for a one-off the amount of work required to get it right
cannot be justified. Use a pen or a typewriter.
