How can I make a cell have no formula?

My users keep typing

"-note for today"

and the excel cell thinks it's an equation so slaps on a "=" at the
beginning of the input.

Is there a way to set all the sells to strings instead of formulas or
equations?

Either format the cells (before entering anything in them) as text, or
precede the text with a single apostrophe ( ')
