How can I hide/unhide columns with those neat + and - signs

Hi,

I wonder how can I insert those neat little + and - signs that allows
users of the sheet to quickly hide and unhide set of rows/columns?

Would be nice feature to learn, but I don't even know what it is
called, so it makes it hard to search from help or google =)

Select the rows to group, Data>Group And Outline>Group

If you want to keep them grouped but hide the + and - symbols then
press

Ctrl + 8

You can also use Data|Subtotals to get these outlining symbols.
 
I think what you are referring to is 'Grouping' from the Data menu

Select the columns you want to be hidden and then select Data > Group & Outline and finally Group. The selected columns will then have a + or - toggle button in a new row above the headings . The same can be done with rows. (Extra tip if you want to hide the extra rows containing the + & - control use CTRL and 8 (not the num pad 8))
