How can I get notified of when an e-mail I sent has been read?

When I send an e-mail, I would like to get notified that either the message
was received, or received an read. What settings would I adjust for this?
 
you need 'read receipts' - to enable it per message look on the options
button when composing a message, for all messages, tools, options, email
options, tracking.
 
What version of Outlook are you using?

When composing the message see if there is an Options button or tab. Go
there and you should see a check box for "Request a Read Receipt".

NOTE: this is not a foolproof solution. In fact some e-mail clients/servers
don't support read receipts so it's entirely possible that you'll never get
any receipt back even though the message was received and read. Further
some people have their systems configured deliberately to NOT send the
receipts.

So it's rather a tenuous solution.
