How can I change the 'From' line on an outgoing e-mail?

I have multiple e-mail accounts. Within Outlook, how can I change the 'from'
line on outgoing e-mails to reflect the different e-mail accounts?
 
When you create a new email, there is a button called "Accounts". That drop
down lists the accounts you can send from. Select the one you want
specifically. Outlook will use the default if you do not manually make this
change.
