How can I change backgrounds in Outlook from dark gray?

While I realize I can format backgrounds to (uh, white?) in individual
emails, the gray...that I don't like seems to be a default. Is there a way to
reset all backgrounds, incoming and outgoing to WHITE?
 
Backgrounds where? Outlook uses Windows themes for its colors so perhaps
you should look there to modify the colors in Outlook.
