I suppose it is Strikethrough from the Font dialog box you are using. You can
assign the command to a toolbar button or you can assign a keyboard shortcut
(or both). To assign a shortcut, do this: Select Tools > Customize and click
the Keyboard button. Below Categories, select Format. Below Commands, select
Strikethrough. Enter the desired shortcut. In order to make the shortcut
available to all documents, select Normal.dot in the Save changes in list.
Click Assign. Click Close.
To save the change to Normal.dot, press and hold the Shift key while you
select File > Save All. If a dialog box opens, asking whether to save changes
to Normal.dot, click Yes.

Note, however, that the Track Changes functionality in Word is designed for
making corrections to documents. So maybe you should use Track Changes
instead of Strikethrough. See this article for details:
