How do I get "unhighlight" the sources in my bibliography? It automatically
comes up highlighted gray when I enter it into my document.

They are highlighted gray to indicate that they are the result of a
field. Moving the cursor to elsewhere in the document should remove
the 'highlighting'.

That depends on whether field shading is set to "Always," "Never," or "When
selected."

How do I check and change the field shading? I'm going to take a wild guess
and say it is set to "Always"

In Word 2003 and earlier, it's on the View tab of Tools | Options. In Word
2007, Office Button | Word Options | Advanced: Show document content. To my
mind, "When selected" makes the most sense.
