Hiding or Excluding Categories

MS Outlook 2000. I have numerous contacts in different categories, Christmas
Cards is one category. How do I hide or exclude the contacts that belong to
Christmas Cards, to review other categories and ultimately add to Christmas
Card listing?
 
Any reason the By Category view doesn't work for that?
