Hiding addresses in the "to:' box

Can I remove the display of the e-mail address associated with the name of
the person I'm sending mail to in the "to:" box? If I remember, this was not
shown in outlook express.

Is your concern that
a) *you* don't want to see the email address, or
b) you don't want the *recipient* to see the email address?
 
In the "New Message" window in Windows Mail, click View and select "All Headers". The Bcc field will appear. Type the addresses you wish to send a blind carbon copy. The list of addresses are hidden from each recipient when you use the Bcc option.

Once you click and "All Headers", you can just click on "bcc" and a list of
everyone in you address book will appear. Just click on the name(s) you want
to send the email to and click on bcc and all the names will appear for you.
But they will not be seen by the other recipents.
 
Thanks all for the help. My biggest concern was that the to box was crowded
and it was difficult to review the list of names in it to be sure I had
included everybody I wanted to receive the message.
 
A follow up question- I don't mind if other recipients see who else received
the email sent, but that info is blocked by using the BCC. Is it possible to
still show the names but not the respective email addresses?

Windows Mail does not change what the recipient sees compared to
what he would see in Outlook Express. You as the composer of the email
will see both the name and the email address. Try it out by sending an
email to yourself.
Even in OE, it was easy for the recipient to see email addresses as well
as the names, if he wanted to. The information is there, only slightly hidden.
