hiding 1 cell

not sure if what you want, but can try columns or rows, by selecting whole
col/rows, right click on area and select hide.

else can change text color to match background, thereby making data invisible.
use of conditional format to hide selected cells can also be used. have a
fixed cell to manipulate on/off, e.g.: in cell (put cursor in cell
desired) for cond. format:
Format, Cond. Format, change condition to "formula is", enter:

=$A$2="x" (cell has an x makes cond. format active), select color of text
you want...
 
You can format the cell to Custom ;;;

Also under Format>cells>protection you can lock that cell and checkmark the
"hidden" option so the contents won't show in the formula bar either.

Then you must protect the worksheet with all other cells unlocked.

Note: this will deprive you of some functions and Excel internal security is not
great and can be circumvented quite easily.
