Hide E-maill address in outgoing but, retain Name of addressee

On outgoing messages, I would like the Names of the addressees' appear but
not thier E-mail addresses.

Could you possibly be a little more vague than that?

If you are sending to a list (you didn't say), you would use Bcc: to
suppress recipient addresses, as viewed by the recipients; but you can't
customize the recipient names. To customize email to the specific recipients
requires mail merge. However, with Bcc: there is a method to put a single
recipient name, which will be seen by all recipients: Put your own email
address in the To: field. But I think you really want mail merge.

If you were talking about something else, expand your problem statement to
include the relevant details of your problem.
