hide contacts e-mail

With Outlook express I was able to hide my contacts e-mail when sending, it
would just say their name, I cannot figure out how to do that now? Help!!!

Same way you did in OE:
Tools | Options | Send
Uncheck "Include message in reply".

By "hide email" do you mean email address or email body contents?
Frank assumed the latter, so I'll answer for the former.

Although it shows both the name and email address in the 'To' line
when sending, when that message is received it will look just like
it was sent by Outlook Express.
