How do I delete the old Header titles that display when I press the dropdown
arrow for Custom Headers?
 
There should be nothing in the Custom Headers dropdown except the currently
entered header.

You must be confusing Custom Headers with Headers which has a long list of crap.

You cannot delete these except by deleting entries in File>Properties.

Even then, you can't get rid of all of them.
