Going from exhange server to POP

Is there any way to go from an exchange server to a POP account?

I have a ton of old information and calander info that I want to keep, but
no longer are using an exchange server.

I have tried to just edit the exchange profile, but it will only allow me to
change it within exchange.

I have tried to delete the exchange account, and it deletes my entire inbox
and everything associated with that exchange server. That causes outlook to
use one of my pst folders as the inbox, but when syncing with other programs
(Mail and contacts on my iphone for example), it won't work because its not
the base folder.

Any suggestions on how to keep everything and get rid of the exchange account?

Yep, export your Exchange mailbox to a PST. At this point you can define a
new mail profile with your POP3 settings and use the PST you just created or
as secondary storage. Once you are comfortable that you have everything out
of your Exchange mailbox, delete the Exchange mail profile.

Note: You will have to jump thru a hoop or two to get your PDA/Phone syncing
again. (e.g. If ActiveSync, delete the partnership and recreate using the
POP3 account.)
