French or German accents disapear in sent emails?

French or German accents disapear in sent emails? When I write an email in
French (with accents) it is ok, then I send it. My counterparts then come
back to me saying that all letters with accents have disapeared from the
email, which makes it incomprehensible to them ??? Help please
 
What character encoding do you specify for your outgoing message? It
should be ISO-8859-1 or Windows-1252, but not ASCII or nothing.
