Free Note application similar to Outlook Notes, for Windows and Linux?

Can somebody recommend a tool similar to the "Notes" module in
Microsoft Outlook - i.e. kind of an editor, where I can scribble
down sheets of notes, which are automatically saved after every
keystroke, and where I don't need to care for a filename?

But, it must have an undo feature (which Outlook Notes does not).

I would like to find such a program on Windows and/or Linux.

Do you mean something like "Post it!" notes? I haven't used ever
MIcrosoft Outlook, so I don't know what kind of notes do you refer to,
but, if so, you can try "Stickies" a program for having stickies notes
(similar to those Post it! paper notes that you can stick to any
surface). And it's freeware.

"Stickies" looks useful, but it is not exactly what I am looking for.
Maybe let's put it like this:

I'm looking for kind of a "Text Editor", with
undo facility, which

* allows me to scribble down notes on several "sheets" without ever
caring to supply a file name for its sheets (Outlook Notes identifies
the different sheets in the overview by showing the first line of each
sheet, which is good enough for me), and

* saves the sheets after each character entered, so that I never have
to care about saving.

As I said, Microsoft Outlook has everything except the undo capability.
And, I would be even more happy if such a utility would be available
under Linux too (it need not be the *same* program under Windows and
Linux).
