When I type a line of text, and the hit the enter key twice, the text font
increases and becomes bold. How do I turn this feature off?

The obvious answer is don't use enter twice. Word is not a typewriter. Use
paragraph spacing instead. However, to turn off this option, uncheck Tools >
Autocorrect options > Autoformat as you type > apply as you type built-in
heading styles. You'll probably want to uncheck most of the stuff on that
dialog.
