formatting problem

Since I moved to Word 2002 I've had a strange problem.
When I format something, such as centering text or make a
bulletted list, Word makes that change to each paragraph
in the document. If I then press "undo", the change
remains only where it was intended to be in the first
place and all the rest goes back to the way it was.
How can I stop this annoying thing from happening?
