Form Text fields in protect form

for using form text fields we need to enable protect from option in forms
window.

Is there any other way to use form text fields without protecting the form ?

No, form fields require document protection.

If you have Word 2007 you can use content controls instead, assuming that
you don't need your document to be backward compatible.
