Form Field Help "?"

In 2003 there was a feature that allowed you to provide instructions for
completing a form, and would not show when the document was printed. A
question mark would appear in the field in which it was applied, and when you
hovered over the field you could see the instructions.
 
I asked for help in word on the topic of legacy formfields and it provided
instructions on how to setup instructions that go away when the field is
entered. I'm looking for instructions that do not appear when the document
is printed. This sounds like you have to delete all of the instructions from
the fields if you do not use that particular field. Am I missing something?
 
The help associated with legacy form fields appears in the Word status bar
when the document is protected for forms not in the document, so it is never
going to be printed. There is no text in legacy form fields unless you
insert default text for that field. You still appear to be using the new
controls which are not really compatible with legacy form fields.
