Where did you try to give this user more rights, on the folder where his
redirected folders exist, the roaming profile share, or on his user account
in AD?

Are these mandatory profiles or do changes the users make stick after
logging off? If these are mandatory profiles try renaming the .man
extension on the ntuser.man to ntuser.dat, have the user logon and open the
Redirected Folder. Have the user log off and rename the ntuser.dat back to
ntuser.man. Have the user log back on and check the Application event logs
to see if the folder redirection errors are gone.
