Fields in a protected form

I want to build a document that has various fields in it that, once
protected, can be filled out by any user. Some of the fields will require
the same data. Can I make a later field be automatically filled in with an
earlier field's contents without re-typing the same data?

Yes, instead of a second field, use a cross-reference to the text of the
bookmark assigned to the first field and check the "Calculate on Exit" box
for that formfield. That will cause the fields in the document to be
updated so that the entered text is shown in the location of the cross
