I'd like to know if it's possible to use an Outlook outside of the company
but able to connect to the Exchange Server.
Without using the OWA/OMA services.

Yes, RPC over HTTP is an Exchange 2003 and 2007 feature that supports that
scenario and Outlook 2003 and 2007 can make RPC over HTTP connections and
maintain the Exchange functionality.

For previous versions you'll have to resort to VPN.

Speak to the mail admins where you work. They are the only ones who can
tell you whether or not they even allow accessing company mail from outside
the company and if they do, how to do it.
