Explorer Display

When I select Start - Explorer, it open with the C: folder expanded to show
all subfolders plus the Users folder is further expanded to the following
levels:
Users
Owner
AppData
Roaming
Microsoft
Windows
Start Menu
Programs

Why? How do I stop this and just show me the first level of subfolders in
C:?

Excellent, James!

To go one step further, I would also like to have the option to expand
and view any other existing drives and any drives that may be plugged
into my system.

That's what "Computer" is for.

You can create a shortcut that opens Explorer at whatever location you
choose:

Right-click on the Desktop and select New and Shortcut, then browse to your
desired target. This will create a shortcut that will open at the folder you
selected.

Or do you mean that you can't browse to anything other than the C drive?
