I have a large word document with several excel charts embedded. Each time a
users adds text, the excel charts move causing huge problems with the headers
and footers of the excel files, etc. Is there any way to lock the excel files
and prevent what's now happening?

It's not possible to lock anything to a particular place on a particular page.
It is possible to format a graphical object to always be on the same place, no
matter which page it moves to. Or a graphical object can always be in the same
place relative to a certain paragraph of text.

Which of these two possibilities would be most acceptable for your situation?
And which version of Word are you using?
