Excel Charts in Word Documents turn into Picture format

I can create and put data in an Excel spreadsheet within
Word and I can edit the date a few times. But after
about three edits the spreadsheet acts like an inserted
picture and when you click on it you get picture
properties instead of Excel to edit the data. The whole
spreadsheet is a picture.

What is causing the format change and how can I stop it?

These are just small charts about 5 rows and 3 columns
created from the toolbar in Word 20002. We often copy
and paste them throughout the document and just edit the
data in them.

I'm guessing that this copy/paste and edit may be causing
the problem. Word is probably getting confused about which
spreadsheet object is which. Do you happen to notice if
ones you create "from scratch" are more stable than those
that have been copied/pasted within the same document?

You see, Word doesn't actually insert the spreadsheet data
at the point where you see it. An EMBED field code is
inserted into the text, which tells Word where in the
binary file format it should look for the data that is then
displayed at this point. When you copy/paste the EMBED
field, these "pointers" may get mixed up and lose contact
with the data. So Word makes the best of a bad bargain and
turns it into a picture so that you can at least see what
you had...
