Excel 2002 converts date to text on manual edit in cell

In MS Excel 97, you could edit a date in the cell
(displayed as dd/mmm/yyyy hh:mm) and change it say from
11:00 to 11:12 in the cell, and Excel would still treat
this as a date.

However, in Excel 2002, when now changing the date / time
say from 11:00 to 11:12 in the cell, Excel 2002 now seems
to convert the date to text, so I can no longer use
formulars on this changed cell.

what am I doing wrong, or what (default) setting needs to
change?

or is this a new feature?

I can't replicate this problem.

If I have a date/time formatted as your example and hit F2 to edit, changing
the 11:00 to 11:12 keeps it as a date/time.

Are you sure your original input is not Text?

No, it is not a new feature in XL 2002.
