Is it possible to set up the date field so that it is possible to enter a
full date (mm-dd-yyyy) when this information is known, or only a year (yyyy)
when only the year is known?

No, not in a date datatype field. 2005 is not a valid date.
If you need to fudge, enter 1/1/2005 as a generic date entry when the
rest of the information is unknown.
