Email Services in 2003 server

What is the difference in the email services in windows 2003 server, than
exchange 2003.

There are lots. The mail service that comes with Windows Server 2003 is a
very limited pop3 service. Exchange 2003 allows you to use a full blown MAPI
client with all the bells and whistles that come with that.
