When I print out an email it prints the receipients and their full email
address. How do I stop it printing out the email address next to each name?

you can't control it; it prints what is in the header. if a contact exists
and the display name is a perfect match, it might show just the name.

In the header it shows only the names of contacts on the screen which is
fine. When I print it, it prints the contact names and the full email
address, which can fill up about half a page which I don't want.

If I print a received message it works ok. Is there no way at all?

Are you printing a message before you send it?

On received messages, you can hit forward and remove addresses (works great
if you use the forward option to not indent or add >).
